SITUATION:
Beblenheim

SOIL:
Stone, sand and limestone

HARVEST:
Manual with entiere grapes on press. Champenois pressing.

VINIFICATION:
Light maceration and fermentation with temperature control.
Traditional method without malolactic fermentation then ageing on lees during 12 months before the riddling.

TASTING:
A nice red-pink colour.
Typical aromas of Pinot Noir with a well-balance.

FOOD PAIRING:
Aperitif or during all a meal.

SERVICE:
8° to 10°

AGEING:
2 to 5 years
